Apple Pumpkin Muffins
Warm, moist, spiced muffins built to ground and nourish Vata through the fall — no dry, crumbly texture here, just pumpkin, apple, ghee, and warming spices.
Serves: Makes 12 muffins
Ingredients
Pumpkin Purée (1 cup) - Sweet
Apple (1, peeled and grated) - Sweet, Astringent
Whole Wheat or Oat Flour (1 3/4 cups) - Sweet, Astringent
Ghee (1/2 cup, melted, plus more for greasing) - Sweet
Eggs (2 large) - Sweet
Maple Syrup (1/2 cup) - Sweet
Ground Cinnamon (1 teaspoon) - Sweet, Pungent, Bitter
Ground Ginger (1 teaspoon) - Pungent
Ground Nutmeg (1/4 teaspoon) - Pungent, Bitter
Ground Clove (1/8 teaspoon) - Pungent, Bitter
Baking Soda (1 teaspoon) - Salty
Sea Salt (1/4 teaspoon) - Salty
Walnuts or Pecans (1/2 cup, chopped) - Sweet, Astringent
Steps
1. Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin with a little ghee, or line with paper liners.
2. In a large bowl, whisk together the pumpkin purée, grated apple, eggs, maple syrup, and melted ghee until smooth and well combined.
3. In a separate bowl, whisk together the flour, cinnamon, ginger, nutmeg, clove, baking soda, and sea salt.
4. Fold the dry ingredients into the wet mixture just until combined — don't overmix, a few lumps are fine. Fold in the chopped nuts.
5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
6. Bake for about 20 minutes, until a toothpick inserted in the center comes out clean.
7. Let the muffins cool in the tin for 5-10 minutes before transferring to a wire rack. Best enjoyed warm.
WHY THESE INGREDIENTS WORK FOR VATA SEASON
Vata is cold, dry, light, and mobile, and fall amplifies all of those qualities. These muffins counter them with the opposite: moist, dense, warm, and grounding. Pumpkin and apple bring natural sweetness and moisture, while ghee and nuts provide the lubricating fat Vata craves. Whole grain flour adds substance and stability, and maple syrup keeps the sweetness gentle and warming. The spice blend of cinnamon, ginger, nutmeg, and clove kindles digestive fire (agni) and adds warmth, making the heavier ingredients easier to digest.
Variations by dosha:
- Vata: As written — rich, moist, and warming.
- Pitta: Go light on the clove and ginger, and use a sweeter apple variety.
- Kapha: Use less ghee and maple syrup, choose a tart apple, and add extra ginger for lightness and heat.
Best Time to Enjoy
Best enjoyed warm as a grounding breakfast or mid-afternoon snack during the cooler, windier months, when Vata is most easily thrown off balance.
